GREEN TEA MARINATED
SALMON
Our green tea imparts a herbaceous earthy flavour to meaty fish cuts or poultry. Serve with maple quinoa or rice medley.

GREEN TEA MARINADE FOR SALMON
¼ cup green tea leaves
¼ tsp of ground pepper
¾ tsp of kosher or sea salt
2 tsp of brown sugar
½ tsp of chipotle powder
¼ cup olive oil
2-8 oz portions salmon

VANILLA ROOIBOS QUINOA OR RICE MEDLEY
1 cup quinoa or rice medley
1 shallot
2 cloves garlic
2 sprigs thyme
2 cups vegetable stock
salt and pepper

METHOD
Blend all ingredients and grind well in mortar and pestle or food processor. Drizzle olive oil on fish and massage in the rub. Refrigerate and marinade for 1-2 hours. Remove and shake off excess oil before grilling on barbecue or cast-iron grill pan.
METHOD
Heat oil and sweat shallot and garlic. Add quinoa or rice medley. Cover with veg stock add thyme salt and pepper. Cover and cook until soft and tender.
